Water level probe for all commercial espresso machines. Use for Astoria, UNIC, La Marzocco, Gaggia, Astra, Rancilio and others. It determines and maintains the level of water in the boiler. The probe depth has to be very carefully adjusted as the temperature of water will depend on the level of water maintained in the boiler. Once the steam pressure is reached, insert the probe to about 4" depth. Watch the level of water in the level sight glass. Make one or to espresso without filter holder and test the temperature of water. It should not exceed 200 degree F. If it exceeds this temperature, then pull the probe 1/4" up. Drain 2-cups of water to activate the pump. The probe will stop the pump when level reaches. Make another long espresso and note the temperature allowing water to drp directly on the thermometer stem.
